Ronald McDonald House Dallas is seeking a skilled and motivated Sous Chef to support daily kitchen operations and assist in delivering high-quality meals and exceptional dining experiences. The Sous Chef will work closely with the Executive Chef to oversee food preparation, maintain kitchen standards, supervise staff and volunteers, and ensure compliance with food safety and sanitation guidelines.

ESSENTIAL RESPONSIBILITES AND DUTIES:
  • Kitchen Operations:
  • Manage a safe and healthy food service program that will deliver quality, variety, service, cleanliness, and value for Ronald McDonald House guests, meal groups, kitchen volunteers, and staff (including internal house events, functions, and meetings).
  • Assist in Creating, Preparing, and Maintaining cost effective and healthy menu options and meals for the food service programs and internal and external house events, functions, and meetings. May require creating and preparing alternative meal options for families with special meal needs.
  • Assist in Creating and maintaining routinely a variety of fun, time efficient, cost effective, and healthy meal menus for the food service program to be used by meal groups, Food Service Coordinators, and Chef.
  • Plan, cook, and serve meals when there is an open meal shift that a meal group has not signed up for.
  • Manage and enforce all food safety and sanitation requirements and practices to maintain high standards of quality control, hygiene, health, and safety and be inspection ready at all times.
  • Assist the Executive Chef in controlling food and kitchen supply inventories within budget guidelines. May Include but not limited to ordering and purchasing of menu items, kitchen supplies, and beverages. Build relationships with food service vendors to obtain best prices (reduced or donated).
  • Assist in the management of the commercial and family kitchen operations.
  • Receive and respond to staff, family, and kitchen volunteer, and meal group complaints and concerns regarding food service or safety related to food service.
  • Serve in an on-call capacity during evenings, weekends, holidays, and inclement weather.
  • Ensure that all staff shifts are covered; may be required to fill in as needed.
 
  • Programming:
  • Help maintain a food service program that establishes a fun and welcoming experience for meal groups, kitchen volunteers, and families. 
  • Monitor and evaluate food service program, recommend and execute improvements in collaboration with the Chef, Chief Operating Officer and across other departments (family activities, marketing, etc.).
  • Research opportunities to enhance or expand the program.
 
  • Administration:
  • Document and maintain accurate records of needed documents related to the food service program and city inspections.
  • Provide information and assist in preparing the fiscal year operational budgets related to food service as requested by and in collaboration with the Executive Chef
  • Monitor costs and identify system problems or potential cost savings.
  • Maintain user manuals/guides for all related applications, systems, and processes.
  • Maintain orientation manual(s) for Food Service Coordinators, kitchen volunteers and meal groups.
  • Volunteer/Community Relations:
  • Solicit feedback from families, kitchen volunteers, other departments, and meal groups to enhance food service and programming. 
  • Provide training, orientation, support, and direction to kitchen volunteers and meal groups in collaboration with the Executive Chef, Food Service Coordinators, Volunteer Services Manager, Family Activities Manager, and Chief Operating Officer.
  • Promote an environment of appreciation toward volunteers and meal groups.
  • Encourage volunteer interaction with families.
  • Provide tours to meal groups, including communicating the mission, when necessary.
  • Coordinate with the Executive Chef and Chief Operating Officer regarding outreach to identify, create, and maintain new partnerships for the food service program. 
  • Participate in special events for RMHD.
  • Maintenance and Facilities Responsibilities:
  • Monitor the kitchens during the course of daily activities for maintenance issues and complete maintenance requests as necessary.
  • Collaborate with maintenance department and Executive Chef regarding any vendor requests, meetings, and projects. 
 
  • Guest Relations:
  • Interact with families, staff, and volunteers to ensure a warm, caring, and homelike atmosphere and experience at all times.
  • Is knowledgeable of RMHD policies and procedures as they relate to families.
  • Identify special family situations and notify the Executive Chef, COO, Senior Family Services Manager, Weekday or Weekend Family Services Managers as appropriate.
 
  • Other:
  • Secure and maintain Food Manager Certification.
  • Perform all other duties as assigned directed by supervisor, administrator in-charge, or CEO.
